Mini Egg Cookies


Heyo!

Since Easter is approaching I wanted to bake something within the theme. I had a little look online and I came across this recipe on the GoodToKnow website. It looked easy enough so I of course had a go. They turned out great and tasted amazing.





Ingredients:

*100g Butter
*100g Light Brown Sugar
*1 Medium Egg
*200g Self Raising Flour
*1 Pack Mini Eggs




Method:

1. Preheat oven to 180°C (Gas mark 4) and line a baking tray with greaseproof paper.

2. Add all the ingredients (except the mini eggs) into a large mixing bowl. Then use a spoon or your hands to combine together into dough. Tip: The ingredients were too dry thus it wouldn't stick together to make a doughy mixture. To solve this problem I added a "pinch" or two of water. DO NOT add more than a "pinch" at a time as it can get too moist very quickly.




3. Put half of the pack of mini eggs in a small cellophane/sandwich bag. Crush the eggs using the top of a rolling pin.

4. Evenly knead the crushed mini eggs into the dough.

5. Using the dough, make golf sized balls, flatten them and put them on a baking tray. Tip: If you want smaller cookies, make the balls about half the size of a golf ball.

6. Push a few of your remaining mini eggs into your cookies.


7. Put in the oven for 7 - 10 minutes. Tip: Remove immediately when they are slightly golden. DO NOT wait for them to harden in the oven. They will do that when they cool down.

8. Leave to cool for about 15 minutes.



I really do recommend this recipe. It's super easy and looks very cute. My sister couldn't even believe they were homemade.
